This single-origin decaf was selected based on cup quality and decaffeinated using ethyl acetate - an organic compound derived from sugar cane - to remove 97% of the caffeine from coffee beans. This process tends to preserve the flavor profile better than most water-processed decaf coffees, and leaves behind a mild but pleasant sweetness. Cultivated in a biological conservation corridor, the farmers of the Valle del Cuaca region are keenly aware of the importance of preservation, water management and friendly environmental practices.
