Roaster’s Notes: Ramirez Estate is an old favorite of ours and we’re incredibly excited to offer coffee from this specific estate once again. The family at the heart of Ramirez Estate is consistently generous towards their community, especially through donating schoolbooks and building a new school in a rural area. Women comprise roughly forty percent of their workforce and they work to help Haitian migrant workers obtain legal residence in the Dominican Republic.
This specific lot of Dominican Republic Ramirez Estate is an extraordinary treat. This natural process coffee is aged in its pulp for eight months in a low oxygen environment and then allowed to rest for an additional two months. This partial anaerobic process stabilizes the cellular structure within the coffee beans and imbibes it with a fantastically fruit forward flavor. The most prominent flavor note in this cup of coffee is bright strawberry wine. This is accentuated by subtle vanilla and sweet cherry background notes.
